Dunn's Famous
Montreal smoked meat is prepared to the exacting
standards set by Myer Dunn. Smoked meat is
prepared from a cut of brisket - after
the fat is trimmed, the meat's surface is rubbed
with seasonings that can include garlic, ground
peppercorns, cinnamon, red pepper, cloves,
allspice and coriander seeds. The meat is
dry-cured, smoked and cooked, and is eaten both
steaming hot and cold.
Montreal smoked
meat is similar in preparation to New York's
pastrami, although the spices and seasonings
are different and unique. Both Montreal
smoked meat and New York pastrami are of
Rumanian Jewish origin - the legend that
goes around Montreal is that two brothers
emigrated from Rumania at the turn of the
last century, one going to New York and one
to Montreal, and that they cured their meat
somewhat differently, giving rise to the
different deli-cacies that we enjoy today.
